These juicy air fryer steak bites cook to a perfect medium-well in less than 10 minutes, with a crisp exterior and melt-in-your mouth middle. With only a handful of simple ingredients, this is an easy dinner for a busy weeknight.

Ingredients
For this air fryer steak bites recipe, you need the following ingredients (exact measurements are in the recipe card below):
- Steak of your choice: I love tenderloin steak. It's a pricey cut of steak, so I stock up when it's on sale and freeze it using my Foodsaver. I used cubed tenderloin in this recipe. I have not tried any other type of steak, but you could try it with whatever cut is your personal preference. I think top sirloin steak and New York strip steak would both work well.
- Olive oil
- Butter
- Garlic cloves: I used four cloves of fresh garlic, but you could substitute garlic powder if you prefer.
- Kosher salt and freshly ground black pepper
- Optional: I like to use some fresh herbs as a garnish, especially if I'm serving this at a party. I used rosemary, but you could also use fresh parsley or thyme.
Instructions
Step One: Preheat the air fryer to 400 degrees F. Cut the steak into approximately 2 inch cubes. Coat the steak cubes in olive oil, and season with salt and pepper to taste (I used about 5-6 grinds each of sea salt and pepper). Put the steak in a single layer in the air fryer basket or tray.
Step Two: Cook the steak in the preheated air fryer for 8 minutes, stopping halfway to turn the steak pieces. For 2-inch cubes of steak, this will result in medium-well doneness. If you like medium doneness, reduce the cooking time by a minute or two. For well-done steak bites, increase by a minute.
NOTE: If you cut your steak bites smaller, you will need to reduce the cooking time accordingly!
Step Three: While the steak cooks, melt butter in a small saucepan over medium-low heat. Add the minced garlic cloves and simmer for 2-3 minutes, until the garlic is fragrant. Remove the garlic butter from the heat.
NOTE: Watch the garlic carefully while it's cooking. You do not want any of it to turn brown, or it will have a bitter burned taste. You just want to cook it gently for a few minutes so that it's no longer raw.
Step Four: When the steak is finished, remove it from the air fryer and allow it to rest for a couple minutes. Add the cooked steak and melted butter to a mixing bowl and stir to coat. Garnish the steak with fresh herbs and serve!
