Baked brie is one of my favorite appetizers. Creamy and delicious, this melty brie cheese is drizzled with a homemade honeyed pear sauce and topped with sweet pear slices and crispy, salty prosciutto. With a festive garnish of pomegranate seeds and fresh rosemary, this appetizer is picture perfect for your next holiday party.

Serve your gooey baked brie with some crusty bread or gluten-free crackers for a fancy appetizer that is deceivingly easy to make. Or enjoy it as a light dinner with a big salad on the side. For other awesome appetizers, try cherry tomato bruschetta or perfect loaded hummus.

Ingredients

Ingredients for baked brie with pears on a marble background.

For this simple recipe, you will need the following ingredients (exact measurements are in the recipe card below).

For the pear sauce:

  • Pear: I used Bartlett pears, but any variety of ripe pears should work fine.
  • Honey: You could substitute brown sugar.
  • Vanilla extract

For the brie:

  • Wheel of brie: I used an 8 ounce wheel. Make sure to choose round brie with rind around the whole wheel – rather than a piece of brie that is already sliced into a triangle.
  • Prosciutto
  • Pear slices
  • Pomegranate seeds: You could substitute dried cranberries.
  • Fresh rosemary: You could substitute fresh thyme leaves.

Other awesome toppings for baked brie

Baked brie is super versatile. You can top this melty creamy cheese with pretty much anything, and it will be delicious. Here are some of my favorite options:

  • Drizzle honey or maple syrup on top of brie and add some fresh herbs for a simple classic version of this popular appetizer
  • Top brie with your favorite fruit preserves and wrap it in puff pastry for a classic brie en croute
  • Spread your baked brie with fig jam and sprinkle with pumpkin seeds or walnuts for a delicious fall seasonal option
  • Drizzle your brie with a homemade balsamic vinegar glaze and serve topped with sliced apples or pears

Instructions

Step One: Preheat the oven to 350 degrees F. Peel and dice one pear. Add the pear, honey and water in a small saucepan over medium heat. Bring the pear mixture to a simmer. Turn the heat to low and sauté pears, covered, for about 10 minutes. When the pear is very soft, and almost all the water is evaporated, remove the saucepan from the heat.

Step Two: Use a blender or immersion blender to blend the caramelized pear into a creamy sauce. Add a few teaspoons of additional water, if needed. The sauce should be the consistency and thickness of very smooth applesauce.

TIP: If you don’t have a blender, you can mash the pear with a potato masher or the back of a fork for a super yummy pear compote.

Should I cut the top off my brie?

Some recipes for baked brie instruct you to cut off the top rind before baking. I don’t suggest it for this recipe, because you need the top rind intact to hold all the delicious toppings. The rind of brie is soft and edible and has a subtle earthy flavor.
