Grilled Bruschetta Chicken
Grilled bruschetta chicken is a perfect easy summer meal. Lightly seasoned grilled chicken breasts are topped with sweet cherry tomato bruschetta and tangy balsamic glaze for a fresh, healthy and delicious dinner.
Outdoor cooking is one of my favorite summer activities. My kids and dogs are usually a little wild right around dinner time (witching hour!!), and shuffling everyone outside to play in the backyard while I cook dinner in the sunshine is my sanity-saver most summer nights. This bruschetta chicken recipe is one of our favorites. Chicken breasts are seasoned with garlic powder and Italian seasoning, grilled to juicy perfection, and topped with fresh bruschetta and sweet balsamic glaze. This recipe is as easy as it is delicious, and I hope it will become a part of your regular meal routine for the summer months.
To make this healthy dinner recipe even easier for the busy weeknights, you can make the homemade bruschetta up to a day ahead. Just let it sit out to warm up a bit as you grill the chicken. Add some fresh vegetables and crusty bread, a pesto pasta salad, or a big side salad for a perfect summer meal. If you have any leftover bruschetta, use it to make burrata bruschetta toasts!

Ingredients
To make this chicken bruschetta recipe, you need the following simple ingredients (exact measurements are in the recipe card below):
For the bruschetta
- Cherry tomatoes: Feel free to substitute any of your favorite fresh tomatoes. Roma tomatoes work well, and so do sweet heirloom tomatoes. If using larger tomatoes, scoop out the seeds before dicing so that your bruschetta doesn’t get too watery.
- Fresh basil leaves
- Extra virgin olive oil
- Garlic cloves
- Kosher salt and freshly ground black pepper
For the chicken
- Boneless chicken breasts
- Olive oil
- Italian seasoning
- Garlic powder
- Kosher salt and freshly ground black pepper
- Balsamic glaze: I used store-bought balsamic glaze in this recipe. A balsamic reduction is very easy to make at home, so feel free to make your own! It only needs two ingredients – balsamic vinegar and brown sugar. Full instructions to make it are in my recipe for arugula burrata salad with balsamic glaze!
Instructions
Step One: Preheat the grill to high heat, approximately 450 degrees F.
Step Two: Prepare the bruschetta. Halve or quarter the cherry tomatoes, depending on their size. Finely chop the basil. Mince the garlic.
Step Three: Add the tomatoes, garlic, basil, salt, pepper and 1 tablespoon olive oil to a small mixing bowl. Stir well to combine all the ingredients. Set aside, and allow the flavors to meld while you prepare the chicken.
Step Four: Combine the Italian seasoning, garlic powder, kosher salt and pepper to make a seasoning mix for the chicken breasts. Brush each side of the chicken breasts with the remaining olive oil, and sprinkle with seasoning.
Step Five: Put the chicken on the preheated grill. Grill chicken with the lid closed for approximately 20 minutes, flipping the chicken breasts halfway through grilling. The chicken is done when it reaches a safe internal temperature of 165 degrees F on a meat thermometer. Remove the cooked chicken from the grill, and allow it to rest for 5-10 minutes.
Step Six: Spoon the tomato mixture over the grilled chicken and add a drizzle of balsamic glaze. Serve immediately!
Tip: You can also make this healthy meal on the stove top. Simply heat a large skillet over medium-high heat. Add enough olive oil to the skillet to coat the bottom (you will need a little more than called for in the recipe). Season the chicken breasts as called for in the recipe, and sear the chicken for 5-7 minutes on each side. The chicken is done when the internal temperature reaches 165 degrees! Remove the chicken from the pan and top with the bruschetta.
