Buffalo Chicken Caesar Salad

I have had a lot of buffalo chicken tenders and homemade Caesar salad dressing in my house the last few weeks. After testing new recipes, there are always tons of leftovers, and it’s up to me to put them to good use. I ate buffalo chicken tenders with a side Caesar salad for a day or two for lunch before I thought “hey, I should mix these together!” Obviously my mom brain doesn’t always work so well these days… but better late than never, because this was delicious! Spicy buffalo sauce does something kind of magical when mixed with creamy dressing, and this salad is bursting with flavor. Forget being an afterthought, this is now added to my regular meal prep routine.
This buffalo chicken salad is made with a bed a crisp romaine lettuce topped with spicy buffalo chicken breasts, creamy avocado, sweet cherry tomatoes and rich Caesar dressing. Drizzle everything with a little extra buffalo sauce and sprinkle on a pinch of kosher salt and fresh ground pepper, and this is really something special. Serve it with a thick baguette slice or some homemade croutons for a hearty salad that can stand on its own for dinner. Or roll it all up in a tortilla for buffalo chicken Caesar wraps.

Ingredients
For this simple salad recipe, you will need:
- Cooked chicken: Follow my recipe for Air Fryer Buffalo Chicken, or use any leftover cooked chicken you have on hand! Turn it into buffalo chicken in a snap by sprinkling it with some onion powder, garlic powder and buffalo sauce.
- Caesar dressing: Try this delicious Greek Yogurt Caesar Dressing, or use store bought.
- Buffalo Sauce: Make your own by combining Frank’s RedHot Cayenne Pepper sauce with butter, or use store bought.
- Romaine lettuce
- Cherry tomatoes
- Avocado
- Parmesan cheese
- Kosher salt and black pepper
- Baguette (optional)
Instructions
Step One: Make Greek Yogurt Caesar Dressing, if using.
Step Two: Make buffalo chicken. You can follow my air fryer buffalo chicken recipe, or use any leftover chicken. If using regular leftover chicken, first chop your chicken into bite-sized pieces if necessary. Then sprinkle approximately 1 pound of chicken with 1/4 teaspoon garlic powder and 1/4 teaspoon onion powder. Toss the chicken with 1/4 cup buffalo sauce, using more or less to suit your desired spice level.
TIP: To make your own buffalo sauce, whisk together 2 parts Frank’s RedHot Cayenne Pepper sauce to 1 part melted salted butter. Using 1/4 cup hot sauce and 1/8 cup butter should give you plenty of buffalo sauce to coat your chicken, with a little left over to drizzle over the salad.
Step Three: Prep your veggies. Chop romaine lettuce into bite size pieces. Halve the cherry tomatoes. Slice the avocado. Layer all the veggies in your salad bowl.
Step Four: Toss the lettuce and veggies with Caesar dressing. Layer the chicken pieces on top of the salad. Sprinkle with Parmesan cheese, a pinch of salt and some freshly ground pepper. Add homemade croutons or baguette slices, if desired. Drizzle with buffalo sauce. Enjoy!

- Pinch of Kosher salt and freshly ground black pepper
