Burrata Bruschetta

I planted twelve cherry tomato plants in my garden this year. Yes, twelve. I completely love cherry tomatoes. They are like bright little jewels of summer sunshine, and I can’t get enough.
Well… to be honest, I think twelve plants was enough. We were so awash in cherry tomatoes by August that at one point I had a five gallon bucket full in my kitchen. What to do with all that garden bounty? Cherry tomato bruschetta of course!
This creamy burrata bruschetta is super simple to make. It is a delicious appetizer for summer parties, and a great main course with a hearty salad after a long day in the sun. So, invite over your friends, your family, maybe a hungry-looking neighbor on their evening walk… anyone who will help you eat up all those lovely cherry tomatoes!

Ingredients
For this delicious burrata bruschetta recipe, you need only a handful of simple ingredients (exact measurements are in the recipe card below):
- Cherry tomatoes: Grape tomatoes, roma tomatoes or heirloom tomatoes work great too. The sweeter the better!
- Fresh basil
- Garlic cloves
- Extra-virgin olive oil
- Sea salt and black pepper
- Bread: I used a french baguette for this recipe, but wheat or sourdough bread would also be great. Use whatever type of bread you like!
- A ball of burrata cheese: You can likely find this fresh Italian cheese near the specialty cheeses in your local grocery store. It is sold in a container floating in water. If you can’t find burrata, you could substitute another soft cheese like goat cheese or even herbed cream cheese. You could also cut up small balls of fresh mozzarella cheese and mix them in with your tomatoes.
- Baslamic glaze: You can make your own balsamic reduction (follow the instructions in this recipe), or buy pre-made balsamic glaze. It is near the olive oil and balsamic vinegar in most grocery stores. You could also change up the flavor of this bruschetta with a drizzle of homemade basil pesto or sundried tomato pesto!
Instructions
Step One: Halve or quarter cherry tomatoes, and add them to a bowl with finely chopped fresh basil, minced garlic, olive oil, salt and pepper. Mix well.
Step Two: Cut the baguette into thin slices and spray or drizzle with a light mist of olive oil. Arrange the slices of bread in a single layer on a rimmed baking sheet. Toast the bread under the broiler for a minute or two until the edges become a beautiful golden brown.
TIP: Cut the baguette on a deep angle (not straight across) for more room for those sweet cherry tomatoes!
Step Three: On a cutting board or plate, cut the burrata cheese open and let the creamy center spill out. Use a butter knife to spread the cheese onto each slice of bread.
Step Four: Put a scoop of the tomato mixture on top of the cheese on each slice of bread.
Step Five: Drizzle with balsamic glaze and enjoy immediately!
