Easy dinners are the name of the game in my house during the holiday season. With tons of Christmas concerts and family gatherings, church activities and gifts to wrap, weeknight meals need to be simple. And I mean really, truly, dump-and-go simple. This easy crockpot chicken spaghetti recipe is perfect for busy days. No chopping or browning required – just throw everything in the crock pot and let dinner cook itself.

Creamy chicken spaghetti is classic comfort food. It’s hearty and delicious, with a crowd-pleasing flavor that your whole family will love. Full of tender cooked chicken and herbs, the delicious cheesy sauce will have your whole family coming back for seconds.   • With just a few simple ingredients, this easy recipe makes a filling and tasty meal.
  • My version of slow-cooker chicken spaghetti doesn’t use any cans of soup. Most recipes call for cream of mushroom soup or cream of chicken soup, but I’ve omitted that in favor of chicken broth, dried herbs and cream cheese, for a tastier and slightly less processed recipe.
  • This is one of my favorite recipes for those truly busy days. It only takes a few minutes of prep time in the morning, and about 10-12 minutes in the evening (just enough to cook the pasta!).

Ingredients

To make slow cooker chicken spaghetti, you need the following simple ingredients (exact measurements are in the recipe card below).

Ingredient Notes

  • Chicken: I used boneless skinless chicken breasts in this recipe. You could also chicken tenderloins if that’s what you have on hand.
  • Pasta: Any kind of cooked pasta will work in this recipe! I used regular spaghetti noodles, but thin spaghetti, linguine, cavatappi or penne would all work well.
  • Cheese: I prefer sharp cheddar cheese in this recipe for flavor, but you could substitute cheddar jack or mozzarella if you prefer. Freshly shredded cheese will melt the best.

Instructions

Step One: Place the chicken breasts in a single layer in the bottom of the crock pot. Sprinkle the chicken breasts with salt, pepper, Italian seasoning, onion powder, paprika and minced garlic.

Step Two: Pour the can of rotel tomatoes with green chiles over the top of the seasoned chicken breasts. Pour the chicken broth into the bottom of the crock pot. Cook the chicken on low for 4-6 hours, until fully cooked through.

Note: Crock pots can vary in heat, and cooking time will vary too! Your chicken breasts may take as little as 3-4 hours to cook through, maybe even less if they are small. Check the temperature with a meat thermometer, and feel free to shred the chicken and proceed with the rest of the recipe as soon as it is fully cooked.

Step Three: When the chicken is fully cooked, remove it from the crock pot and use two forks to shred it into bite sized pieces. Return the shredded chicken to the crock pot and stir it into the sauce.

Step Four: Add the cubed cream cheese and shredded cheddar cheese to the crock pot. Stir it into the chicken mixture until well combined. Cover the crock pot with the lid, and allow the sauce to continue heating through as you make the pasta.

Step Five: Cook spaghetti according to package directions. When the pasta is cooked al dente, drain it. Add the cooked spaghetti to the crock pot and stir well to combine. Season with additional salt and pepper, and a pinch of red pepper flakes to taste.

Storage

Allow leftover chicken spaghetti to cool to room temperature before storing. Place leftovers in an airtight container in the refrigerator for up to 3-4 days. Sprinkle a little water over the pasta before reheating in the microwave, to help the sauce reconstitute.

  • 1.5 pounds boneless skinless chicken breast

  • 1/4 teaspoon black pepper
  • 1 teaspoon Italian seasoning
