Delicata Squash Apple Salad

Delicata squash and apple salad is a beautiful salad that is bursting with fall flavor. Served with a simple homemade vinaigrette dressing, this easy meal is fresh and delicious.

I am loving lunch right now. As a stay-at-home mom, I have spent the last several years eating whatever I can get my hands on while chasing after two busy little boys. Most days, that meant hummus with crackers with my one free hand, maybe a handful of carrot sticks while walking the dog, or a granola bar in the car. I do love hummus… but I had bigger dreams for lunch. Dreams of a real meal, eaten with a fork and time to chew, ideally while sitting down. Well, with both my kiddos off to school this fall… those dreams are coming true, my friend.

Delicata squash apple salad is my favorite grown-up salad. Roasted or grilled delicata squash has a delicious caramelized creamy flavor. Served over a bed of fresh spring mix with honeyed goat cheese, sweet apples, and roasted pumpkin seeds, this salad recipe is the perfect way to close out October. Top it with a simple blackberry balsamic vinaigrette dressing, and I promise this will be the best lunch you have had all month.

To make delicata squash apple salad, you need the following simple ingredients (full list is in the recipe card below).

Ingredient Notes

  • Delicata squash: Delicata squash is a delicious and super easy-to-cook fall squash. The skin is thin enough to eat, so no peeling required! Just halve the squash, scoop out the seeds, and cut it into slim half-moon slices.
  • Extra virgin olive oil: for roasting or grilling the squash. You can substitute another neutral cooking oil.
  • Kosher salt and freshly ground black pepper: for seasoning the squash – use a generous pinch of salt.
  • Spring mix: I used a spring mix and spinach combination. This recipe would also be delicious with a kale mix.
  • Honeyed goat cheese: I used Montchevre honey goat cheese, which was so yummy. This would also be great with plain goat cheese. The creaminess of goat cheese is really delicious on this salad.
  • Honeycrisp apple: Use whatever variety of crispy fresh apple you have on hand!
  • Blackberry balsamic vinaigrette dressing: You could substitute an apple cider vinaigrette dressing. A creamy poppyseed dressing would also be yummy on this salad.

Instructions

Step One: Grill or roast the delicata squash. First, seed, halve and cut the squash into half moon slices. To grill, the squash, follow my recipe for grilled delicata. To roast the squash, preheat oven to 425 degrees F. Place the squash slices in a single layer on a baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Roast for about 20-25 minutes, until edges are caramelized and golden, flipping squash halfway for even browning. Allow the roasted or grilled squash to cool for a few minutes before adding to the salad.

Step Two: Make the blackberry balsamic vinaigrette, if using.

Step Three: Assemble the salad. Slice the apple into thin slices. Add the spring mix to the bowl. Arrange apple slices and roasted squash on top of the spring mix.

Crumble goat cheese onto the salad, and sprinkle on pumpkin seeds and pomegranate arils. Drizzle with dressing. Serve with additional dressing on the side.
