Fall is my favorite season. The beautiful weather and colors aside, I love fall because it always feels full of promise. The kids are excited to head back to school, and I’m spending my evenings labeling school supplies and cleaning closets. I made a chore list for the year, and vow that this will be the year I actually dust my house on a schedule rather than waiting until I can write my name on the end tables (I VOW it…).
Back to school is also the time of the year that I stock up my Pinterest boards with quick and easy meal ideas. I especially love family friendly meals that are healthy, delicious and on the table with minimal prep and dishes in less than 30 minutes.
This easy ground chicken stir fry checks all the boxes! It’s loaded with healthy protein and veggies, and coated in a delicious homemade stir fry sauce with only a handful of pantry staple ingredients. It’s great for meal prep, and only takes 15 minutes to cook. Serve this stir fry with coconut basmati rice for an easy and flavorful addition to your fall meal plan.

Ingredients
To make ground chicken stir fry, you need the following simple ingredients (full ingredients list with exact measurements is included in the recipe card below)
Ingredient Notes
- Ground chicken: Using ground meat in this recipe keeps the prep so simple! Substitute ground turkey or ground beef for an equally yummy stir fry. You can also used diced up chicken breast, if you prefer.
- Oil: I used olive oil because that’s what I had on hand, but sesame oil is traditional for stir fry and would be delicious in this recipe.
- Honey: Feel free to substitute brown sugar.
- Veggies: Use any of your favorite stir fry veggies in this recipe. I used Chinese long beans in this recipe, but any green bean will work great! Broccoli, pea pods, onions, mushrooms, water chestnuts and carrots would all be delicious additions.
- Red pepper flakes: If your family doesn’t like spicy food, feel free to leave out the red pepper flakes. The sauce will still be delicious!
- Garlic and ginger: You can use pre-minced garlic and ginger to make this dinner even quicker.
Instructions
Step One: Add the ground chicken to a large skillet or wok over medium heat. Sauté the chicken for 5-7 minutes until fully cooked, using a spatula to break the meat into small chunks. Drain the fat, if necessary, and remove the chicken from the pan.
Step Two: Add the olive oil to the skillet and turn the heat up to medium-high. Add the green beans and red pepper strips. Stir fry the vegetables for 4-5 minutes, until crisp-tender, stirring frequently.
Step Three: Return the cooked chicken to the pan, along with the grated ginger and minced garlic, and stir well to combine. Turn the heat back down to medium.
Step Four: Add the soy sauce, honey, rice vinegar, water, cornstarch and red pepper flakes to a small bowl or mason jar. Whisk or shake well, until the sauce is fully combined and no lumps of cornstarch remain. Add the sauce to the skillet and stir for 1-2 minutes until the sauce has thickened enough to coat the back of a spoon.
Step Five: Garnish the stir fry with green onions and sesame seeds, and serve!
Storage
This stir fry is perfect for meal prep. Store leftovers in the refrigerator for 3-4 days, and reheat as needed! If stored over rice, sprinkle a little bit of water over the dish before reheating in the microwave to make sure the rice doesn’t dry out.
