This teriyaki ground turkey is so good! Made with lean ground turkey and a super tasty homemade teriyaki sauce, this healthy family recipe has tons of great flavor. This recipe takes minimal effort, very little prep and cleanup, and is perfect for the busy weeknights. To make it extra quick, use a pre-cut vegetable mixture from your grocery store produce department!

To make ground turkey teriyaki, you need the following simple ingredients (exact measurements are in the recipe card below):

For the stir fry:

  • Olive oil or sesame oil
  • Lean ground turkey: I use 93/7 lean ground turkey in this recipe. Feel free to substitute ground chicken or ground pork if you prefer.
  • Your favorite vegetables: I used diced carrots and broccoli florets for this recipe, but use whatever you like! Other great options would be snow peas, bell peppers, green beans, bok choy, water chestnuts or baby corn.
  • Fresh garlic cloves, minced
  • Fresh ginger, ground
  • Green onions and sesame seeds for garnish

For the teriyaki sauce:

  • Brown sugar: You could substitute honey
  • Rice vinegar
  • Soy sauce: You could substitute coconut aminos, but you may want to reduce the sugar, as coconut aminos is naturally a little sweeter than soy sauce.
  • Warm water: Using warm water will help the sugar dissolve for the teriyaki sauce.
  • Corn starch

Instructions

Step One: Prepare the vegetables. Peel and dice the carrots. Dice the broccoli florets into small pieces.

Step Two: Heat sesame oil or olive oil in a large skillet over medium-high heat. When the oil is warm, add the raw ground turkey and cook about 5 minutes, until the meat is browned. Crumble ground turkey into small pieces with a wooden spoon as it browns.

Step Three: Add the diced vegetables, minced garlic and ground ginger to the pan. Stir fry the vegetables until tender-crisp, about 5 more minutes.

Step Four: In a small bowl, mix soy sauce, brown sugar, rice vinegar, warm water and cornstarch until the sugar dissolves and everything is well combined. There should be no lumps of cornstarch remaining.

Step Five: Turn the heat down to medium. Pour teriyaki sauce into the skillet and stir well to fully cover the ground meat and veggies. Allow the stir fry to simmer for a few minutes over medium heat, until the sauce has thickened enough to coat the back of a spoon. Serve the turkey teryiaki over rice or in a lettuce wrap for a delicious meal!

Storage

Store leftovers in an airtight container in the refrigerator for 3-4 days. For longer storage, add fully cooked and cooled ground turkey mixture to freezer bag and remove as much air as possible. The turkey should keep for 4-6 months in the freezer. Allow it to thaw in the refrigerator before reheating.
