As my kids grow up and join more after-school activities, I’m really starting to embrace my crock pot. I got a crock pot for my wedding ages ago, but it spent years collecting dust at the back of my pantry. I am just now coming to truly appreciate it, along with the wisdom of my mom, who insisted I needed one. There is nothing I appreciate more than knowing dinner will be ready after a long day of soccer practice, guitar, church activities… you name it. Bonus points if, like this delicious slow cooker pepperoncini pork roast, that dinner is both reasonably healthy and a family favorite. 

Crockpot pepperoncini pork takes only a handful of simple ingredients. Homemade ranch seasoning, butter, and lots of tangy pepperoncini peppers give this easy meal tons of delicious flavor. I keep a pre-mixed jar of ranch seasoning mix in my fridge for recipes just like this. It only takes about 5 minutes to mix up, and is one of those pantry staples, like my chicken taco seasoning, that makes homemade meals actually possible on the busy weeknights. If you don’t have homemade ranch mix on hand, or don’t have time to make it (been there), you can substitute a store-bought ranch seasoning packet!

This tangy pork is perfect in sandwiches, or over egg noodles, a bed of rice or mashed potatoes. Try riced cauliflower for a low carb option! Add a side of veggies, like broccoli or green beans and carrots, for a well-balanced meal your whole family will enjoy.

To make crockpot pepperoncini pork roast, you need the following simple ingredients (exact measurements are in the recipe card below):

  • Boneless pork roast: I have used both pork shoulder and pork tenderloin roast in this recipe (pork tenderloin is pictured). They both work great! Pork tenderloin will keep the recipe as lean as possible, and leads to a light and slightly drier shredded pork. It’s great on sandwiches or wraps with a little ranch dressing. Pork shoulder is higher in fat, which means a richer and juicier pulled pork. This is the most typical cut of pork to use in pulled pork recipes, and is usually my choice for serving over mashed potatoes or rice. If you use pork shoulder, make sure all large areas of fat are removed.
  • Dry ranch dressing mix: My homemade ranch mix recipe includes dried buttermilk, parsley, garlic powder, onion powder, dill, salt and pepper. If you are short on time, feel free to substitute a store bought ranch mix packet for a very similar flavor.
  • Salted butter: Unsalted butter will also work fine! I always taste the dish at the end and add more salt and pepper as needed.
  • Peperoncini peppers: You can use whole pepperoncinis or sliced. If you prefer your chicken spicy, try adding up to 1/4 cup of the pepperoncini juice.
  • Chicken broth: A small amount of chicken broth in the bottom of the crock pot makes extra gravy for later!

Instructions

Step One: Place the pork roast in the bottom of the slow cooker. If you have more than one roast, make sure they are in a single layer, not overlapping.

Step Two: Sprinkle ranch dressing mix on top of the pork. Slice the butter into thin slices, and place it on top of the seasoned pork

Step Three: Slice the pepperoncini peppers and add them to the crock pot on top of the pork.

Step Four: Pour chicken broth into the bottom of the crock pot, evenly surrounding the pork.

Step Five: Turn the crock pot on low and cook for 8-9 hours. When the pork roast is fall apart tender, remove it from the crock pot and shred the cooked pork with two forks.

Step Six: When the pork is removed from the crock pot, use a whisk to stir the sauce. If you are using my homemade ranch dressing mix, it contains real buttermilk, so some lumps may remain. Return the pork to the crock pot and stir well to combine the pulled pork with the sauce. Garnish with more pepperoncini peppers, if desired, and serve!

Storage

Store leftover pork in an airtight container in the refrigerator for up to 3-4 days. To reheat, sprinkle a tables or two of water into the chicken to keep it from drying out and microwave until warm.
