Pineapple Cucumber Smoothie

Made with a handful of simple ingredients, this creamy pineapple cucumber smoothie is the perfect way to get in a serving of fruits and veggies before you head out for the day.

I love a good green smoothie. I am not a morning person, and sometimes it’s all I can do to sit upright and not glare at everyone, much less make my kids a healthy breakfast. A green smoothie is the ideal solution. Super simple to put together, and full of healthy ingredients like fresh fruit and veggies, I always feel good about serving my kids a smoothie before school.

This sweet pineapple cucumber smoothie recipe is a family favorite. It’s refreshing on a hot summer day, and perfect for a little immune system boost in the fall (spinach, mango and pineapple are all high in Vitamin C). This delicious drink is a great way to introduce skeptical little ones to the idea of veggies (yes cucumbers!) in a smoothie. Tropical fruits are high in natural sugar, so this creamy smoothie is naturally very sweet.

You can even make the leftover smoothie into popsicles with a simple popsicle freezer mold. Fellow parents who are not morning people – you know what is easier (and maybe cooler) than a breakfast smoothie? Breakfast popsicles!

Gather up your ingredients. For this simple cucumber pineapple smoothie, you will need:

  • Sliced cucumber: Make sure to use a seedless cucumber variety for this recipe, like english cucumber or persian cucumbers. I don’t recommend regular cucumbers with seeds – they can make it difficult to get a nice creamy consistency in your smoothie.
  • Fresh baby spinach: A fantastic way to add lots of extra fiber and nutrients, and a pretty bright green color, to this smoothie.
  • Fresh pineapple chunks: Take your time to choose a nice ripe pineapple! Some of my best tips are below.
  • Frozen banana: Frozen banana and mango give a nice creamy texture to the smoothie.
  • Frozen mango: Again, giving us that thick creamy base!
  • Greek yogurt: Greek yogurt is great for added protein. I used plain 2% Greek yogurt in my smoothie.
  • Cold Water: Water helps everything blend together nicely and keeps the smoothie from becoming too thick. You could also use coconut water or milk (regular milk, almond milk or oat milk would all work). If you want a little thinner smoothie, add more liquid.

How to Choose Ripe Pineapple

A nice ripe pineapple really makes this smoothie, and using an underripe or overripe pineapple can ruin the flavor. Here are a couple of my best tips for choosing a ripe pineapple:

  • Color: Choose a pineapple that is a greenish-yellow color. If you see any brown spots, the pineapple is probably overripe. If the pineapple is fully green, it may be under ripe.
  • Smell: You might feel weird smelling pineapple at the grocery store. Embrace it, friend. This is the best way to tell if your pineapple is ripe. If you smell the pineapple towards the bottom it should have a pleasant sweet and fresh pineapple-y smell. If it smells sickly sweet or at all bitter, like it is starting to ferment, the pineapple is overripe. If you can’t smell anything at all, the pineapple may be under ripe.
  • Touch: If you pick the pineapple up and squeeze it, you should feel it give just slightly under your fingers. It should still be firm, but not rock solid. A rock solid pineapple is under ripe. A squishy pineapple is overripe.

Instructions

Step One: Put all ingredients together in a high speed blender.

Step Two: Blend the ingredients for about a minute, until smooth and creamy. I use the “smoothie” button on my blender.

TIP: If you do not have a high speed blender, you can still make a green smoothie. I would recommend blending your smoothie in a couple of steps. First, blend the spinach, cucumber and liquid together until the veggies are liquefied with no lumps. Second, add the fruit and blend again. Getting a little chunk of frozen mango in your smoothie is no big deal (and actually kind of yummy), but no one wants an unblended chunk of spinach or cucumber in their smoothie. Blending the water and veggies together as a first step ensures they are blended well.

Storage

I prefer to drink green smoothies fresh on the day we make them. You can store leftover smoothie in an air-tight container in the refrigerator for a day or two, but in my opinion the flavor is not quite as sweet and fresh.

Instead, invest in some freezer popsicle molds and make smoothie popsicles! This pineapple smoothie recipe is perfect for popsicles because it is so naturally sweet. Smoothie popsicles are a fun breakfast in the summer, and a great after school snack.
