Blueberry Cornbread

– 1 ¼ cup white whole wheat flour plus a pinch – ¾ cup yellow cornmeal – 2 teaspoons baking powder – 1 teaspoon salt – ⅔ cup white sugar – 1 egg – 1 cup milk – ⅓ cup butter melted – 2 cups fresh blueberries divided

Step 1

Gather the ingredients. Preheat oven to 400 degrees F.

Add dry ingredients to a large mixing bowl.

Step 3

Pour wet ingredients into dry ingredients.

Step 4

Stir until combined.

Step 5

Fold in 1 1/2 cups blueberries.

Step 6

Pour batter into a well greased baking pan.

Step 7

Scatter remaining blueberries on top.

Step 8

Bake for 25-30 minutes, until the edges are golden and middle is set.

Step 9

Cool for 5 minutes in the pan, then remove to a cooling rack.
