Easy Crockpot Cowboy Soup

Crockpot Cowboy Soup is a simple and flavorful meal that will stick to your bones. With lots of lean ground beef, beans, potatoes and veggies, this slow cooker soup is filling and delicious.

ingredients

– 1 tablespoon extra virgin olive oil – 1 small onion diced – 1 pound lean ground beef (93/7) – 1 teaspoon chili powder – 1 teaspoon ground cumin – 1/2 teaspoon kosher salt – black pepper to taste – 1 large russet potato peeled and cubed – 1 12 ounce bag frozen mixed vegetables – 2 teaspoons minced garlic – 2 15.5 ounce cans chili beans – 1 14.5 ounce can petite diced tomatoes with green chiles (rotel) – 1 14.5 ounce can petite diced tomatoes drained – 4 cups beef broth

Step 1

Gather the ingredients. 

Step 2

Cook onions in olive oil until soft.

Step 3

Add lean ground beef. 

Step 4

Cook beef until browned, and add seasonings.

Step 5

Add beef, potatoes and veggies to the crockpot.

Step 6

Top with chili beans and tomatoes.

Step 7

Pour in beef broth and cook on low 6-8 hours.

Step 8

Season to taste.

Step 9

Top with your favorite toppings and serve!
