Easy Homemade Egg Bites

Homemade egg bites are the perfect option for a quick breakfast or healthy lunch. Full of veggies and protein, these yummy egg cups will be a new regular in your meal prep routine.

ingredients

– 1 tablespoon olive oil – 1/2 cup red bell pepper diced – 1 1/2 cups fresh baby spinach roughly chopped – salt and pepper to taste – 1 bunch green onions – 6 large eggs – 2/3 cup shredded white cheddar cheese – 1/4 cup half and half

Step 1

Gather the ingredients. 

Step 2

Sauté the veggies in olive oil until tender. 

Step 3

Whisk together the eggs and half and half. 

Step 4

Put a scoop of veggies into each well of an oiled mini muffin tin.

Step 5

Top the veggies with grated cheese.

Step 6

Pour egg mixture into each muffin tin and season with salt and pepper.

Step 7

Bake at 350 F for 10-12 minutes, until set.
