Grilled Bruschetta Chicken

Grilled bruschetta chicken is a perfect easy summer meal. Lightly seasoned grilled chicken breasts are topped with sweet cherry tomato bruschetta and tangy balsamic glaze for a fresh, healthy and delicious dinner.


For the bruschetta – 12 ounces cherry tomatoes – ¼ cup fresh basil leaves (about 10 large leaves) – 1 tablespoon extra virgin olive oil – 2 cloves garlic – ¼ teaspoon kosher salt – freshly ground black pepper to taste For the chicken – 1 ½ pounds boneless skinless chicken breasts (4 small 6-ounce chicken breasts) – 1 tablespoon olive oil – 1 teaspoon Italian seasoning – ½ teaspoon garlic powder – ½ teaspoon kosher salt – 1 ½ tablespoons balsamic glaze

Step 1

Gather the ingredients.

Halve the tomatoes and slice the basil.

Step 3

Mix the bruschetta ingredients together.

Step 4

Season the chicken.

Step 5

Grill the chicken until it reaches an internal temp of 165 degrees F.

Step 6

Let the chicken rest for 5 minutes.

Step 7

Top the chicken with bruschetta.
