Minestrone Soup With Orzo

Vegetable orzo soup is a hearty and delicious soup that is filled  with tons of healthy veggies! This one-pot meal has a classic minestrone  flavor that your whole family will love.

ingredients

– 2 tablespoons olive oil – 1 onion – 4 cloves garlic – 2 ribs celery – 3 carrots – 1 small zucchini (about 1 cup diced) – 2 Yukon gold potatoes – 2 15 ounce cans petite diced tomatoes – 4 cups vegetable broth or chicken broth – 1 teaspoon Italian seasoning – 1 15.5 ounce can garbanzo beans drained and rinsed – 1 cup dry orzo pasta – ½ cup frozen peas – 2 ounces fresh baby spinach – kosher salt to taste (about ½ teaspoon) – freshly ground black pepper to taste

Step 1

Gather and prepare the ingredients.

Step 2

Saute the onion in olive oil until fragrant. 

Step 3

Add the garlic, carrots and celery and cook a couple minutes more.

Step 4

Add potatoes, zucchini, tomatoes, broth, seasoning and beans.

Step 5

Simmer over medium heat 12-15 minutes, until veggies are tender-crisp.

Step 6

Add orzo pasta, and cook about 10 minutes, until al dente.

Step 7

Add spinach and peas, and stir to incorporate.

Step 8

Serve immediately and enjoy!
