Easy One Pot Skillet Lasagna

Skillet lasagna is the perfect weekday comfort food. With seasoned ground turkey, tender noodles and lots of melty cheese, this easy one-pot dinner has all the flavor of traditional layered lasagna and none of the fuss.

ingredients

– 1 tablespoon extra virgin olive oil – 1 pound ground turkey 93/7 – 1/2 medium onion diced – 1 1/2 teaspoons Italian seasoning – 1 teaspoon fennel seeds – 1 teaspoon kosher salt divided – 1/2 teaspoon garlic powder – 3 ounces baby spinach roughly chopped – 24 ounces marinara sauce – 1-2 cups water – 8 lasagna noodles (half of a one pound box) – 1/2 cup ricotta cheese – 4 ounces mozarella cheese – fresh basil optional – 1 pinch red pepper flakes optional

Step 1

Gather the ingredients. 

Step 2

Sauté onion, turkey and seasonings until cooked through.

Step 3

Add chopped baby spinach.

Step 4

Sauté 3-4 minutes, until cooked down.

Step 5

Add water and marinara sauce.

Step 6

Break lasagna into small pieces and add to skillet.

Step 7

Simmer noodles until cooked al dente.

Step 8

Top with ricotta and mozzarella cheese.

Step 9

Return to stovetop or broil until cheese is melted.
